Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup sautéed onions (from 1 medium onion)
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375°F (190°C). Season the chicken breasts with garlic powder, paprika, salt, and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Cook the chicken breasts for 6–7 minutes per side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, melt the butter over medium heat. Add the sautéed onions and cook for 3–4 minutes, stirring occasionally, until the onions are tender and slightly caramelized.
  4. Add the chicken broth and heavy cream to the skillet. Stir to combine, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer and cook for 2–3 minutes until slightly thickened.
  5. Return the chicken breasts to the skillet, spooning the sauce and onions over the top. Sprinkle the shredded cheddar cheese on top of each chicken breast.
  6. Transfer the skillet to the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.
  7. Serve the smothered chicken with the sauce and onions from the skillet.

Notes

  • This dish pairs well with mashed potatoes, rice, or steamed vegetables.
  • If you prefer a spicier version, add some jalapeños or a pinch of cayenne pepper to the sauce.
