Description

Tex Mex Cabbage Skillet is a one-pan dinner that’s hearty, low-carb, and packed with Tex-Mex flavor. Featuring tender cabbage ribbons and seasoned ground beef in a spicy tomato-based sauce, it’s a quick and satisfying meal.

Ingredients

  • Lean Ground Beef: 1 pound – Provides rich, savory protein to anchor the dish.
  • Green Cabbage: 5 cups, shredded or chopped – Adds volume and absorbs all the bold flavors.
  • Onion: 1 medium, diced – Brings sweetness and body to the base.
  • Garlic: 3 cloves, minced – Punches up the savory flavor.
  • Diced Tomatoes: 1 can (14.5 oz), drained – Juicy and acidic to balance the richness.
  • Chili Powder: 1 tablespoon – Adds smoky heat and classic Tex-Mex flavor.
  • Cumin: 1 teaspoon – Earthy and warm, perfect with chili spices.
  • Olive Oil: 1 tablespoon – Helps sauté the aromatics and beef to golden perfection.

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium heat. Add olive oil and let it warm up.
  2. Combine Ingredients: Add onion and garlic, cooking until soft and fragrant, about 2 minutes. Add the ground beef, breaking it apart with a spoon. Cook until browned and no longer pink.
  3. Prepare Your Cooking Vessel: Drain excess fat if needed. Stir in chili powder and cumin, mixing well to coat the meat.
  4. Assemble the Dish: Add in the diced tomatoes and stir to combine. Let it simmer for 2–3 minutes to blend the flavors.
  5. Cook to Perfection: Add shredded cabbage to the skillet. Toss to combine. Cover and cook for 10 minutes, stirring occasionally, until the cabbage is tender.
  6. Finishing Touches: Uncover and let any excess liquid cook off. Adjust seasoning with salt, pepper, or a splash of hot sauce if desired.
  7. Serve and Enjoy: Spoon into bowls and garnish with cilantro, lime wedges, or shredded cheese for extra flavor.

Notes

  • Use a wide skillet so the cabbage cooks evenly.
  • Don’t skip blooming the spices with the beef.
  • Serve with lime and cheese for an extra punch of flavor.
