Description

Teriyaki Chicken Crispy Rice Salad is a vibrant and flavorful dish with tender teriyaki-glazed chicken, crispy rice, fresh vegetables, and a tangy dressing for a satisfying meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 2 cups cooked white rice (preferably day-old)
  • 1/2 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1 tablespoon sesame seeds
  • 1 tablespoon vegetable oil (for frying rice)
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder

Instructions

  1. Marinate the chicken breasts in the teriyaki sauce for at least 30 minutes.
  2. In a large skillet, heat olive oil over medium heat and cook the chicken breasts for 6-7 minutes per side, or until fully cooked. Remove from the pan and set aside to rest. Slice the chicken into strips.
  3. In a separate pan, heat vegetable oil over medium heat. Add the cooked rice and press it into an even layer. Fry the rice until crispy, about 5 minutes, then flip and cook the other side until crispy. Remove from heat.
  4. In a small bowl, whisk together the rice vinegar, soy sauce, honey, sesame oil, garlic powder, and ginger powder to create the dressing.
  5. In a large bowl, combine the crispy rice, cucumber, carrots, green onions, and cilantro. Drizzle with the dressing and toss gently to combine.
  6. Top the salad with the sliced teriyaki chicken and sprinkle with sesame seeds.
  7. Serve immediately or chill before serving for a colder option.

Notes

  • For extra crunch, add toasted almonds or chopped peanuts.
  • Feel free to substitute the chicken with grilled shrimp or tofu for a different protein option.
