- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 2 tablespoons sesame seeds (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together tahini, granulated sugar, and brown sugar until smooth and well combined.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
- Add the dry ingredients to the wet ingredients and mix until combined, forming a dough.
- Using a tablespoon or cookie scoop, form the dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
- If desired, sprinkle sesame seeds on top of each cookie ball for extra texture and flavor.
- Bake for 10-12 minutes, or until the edges are lightly golden. The center will remain soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, you can add a pinch of sea salt on top of the cookies before baking.
- These cookies are naturally soft, so don’t worry if they seem undercooked in the center. They will firm up as they cool.
