Ingredients

  • Large Russet Potatoes: 4
  • Ground Beef: 1 lb
  • Taco Seasoning: 2 tablespoons
  • Onion: 1 small, finely chopped
  • Garlic: 2 cloves, minced
  • Olive Oil: 1 tablespoon
  • Shredded Cheddar Cheese: 1 cup
  • Sour Cream: ½ cup
  • Cherry Tomatoes: ½ cup, halved
  • Shredded Lettuce: 1 cup
  • Green Onions: ¼ cup, sliced
  • Salt & Pepper: To taste

Instructions

  1. Preheat Your Equipment: Preheat your oven to 400°F. Line a baking sheet with foil or parchment paper.
  2. Combine Ingredients: Scrub potatoes clean. Rub with olive oil and sprinkle with salt. Place on the baking sheet and bake for 45–60 minutes, until skins are crisp and centers are soft.
  3. Prepare Your Cooking Vessel: While potatoes bake, heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft. Add ground beef, cooking until browned. Stir in taco seasoning and a splash of water, simmering until thickened.
  4. Assemble the Dish: Once potatoes are done, let cool slightly. Slice each one open lengthwise and gently fluff the inside with a fork. Scoop out a bit if needed to make room for filling.
