Description
Taco Cups are a fun and easy appetizer or meal made by baking seasoned taco filling in crispy wonton wrappers or tortillas, topped with your favorite taco toppings.

- 12 wonton wrappers or small round tortillas
- 1/2 lb (225g) ground beef or ground turkey
- 1 tablespoon taco seasoning
- 1/4 cup water
- 1/2 cup black beans (optional)
- 1/2 cup corn kernels (optional)
- 1/2 cup salsa
- 1 cup shredded cheddar or Mexican blend cheese
- 1/4 cup chopped tomatoes
- 1/4 cup chopped lettuce
- 1/4 cup sour cream or Greek yogurt
- Chopped cilantro, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Spray a muffin tin with nonstick cooking spray and press one wonton wrapper or tortilla into each cup.
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Stir and simmer for 2-3 minutes until thickened.
- Add black beans and corn if using, and cook for another minute.
- Spoon the meat mixture into each prepared cup. Top with a little salsa and shredded cheese.
- Bake for 10-12 minutes until edges are golden and cheese is melted.
- Remove from oven and top with tomatoes, lettuce, sour cream, and cilantro before serving.
Notes
- You can use cooked shredded chicken or ground tofu as an alternative protein.
- Customize toppings with avocado, jalapeños, or hot sauce.
- These reheat well and are great for meal prep or parties.
