Description

Taco Cups are a fun and easy appetizer or meal made by baking seasoned taco filling in crispy wonton wrappers or tortillas, topped with your favorite taco toppings.


Ingredients

  • 12 wonton wrappers or small round tortillas
  • 1/2 lb (225g) ground beef or ground turkey
  • 1 tablespoon taco seasoning
  • 1/4 cup water
  • 1/2 cup black beans (optional)
  • 1/2 cup corn kernels (optional)
  • 1/2 cup salsa
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped lettuce
  • 1/4 cup sour cream or Greek yogurt
  • Chopped cilantro, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray a muffin tin with nonstick cooking spray and press one wonton wrapper or tortilla into each cup.
  3. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  4. Add taco seasoning and water to the beef. Stir and simmer for 2-3 minutes until thickened.
  5. Add black beans and corn if using, and cook for another minute.
  6. Spoon the meat mixture into each prepared cup. Top with a little salsa and shredded cheese.
  7. Bake for 10-12 minutes until edges are golden and cheese is melted.
  8. Remove from oven and top with tomatoes, lettuce, sour cream, and cilantro before serving.

Notes

  • You can use cooked shredded chicken or ground tofu as an alternative protein.
  • Customize toppings with avocado, jalapeños, or hot sauce.
  • These reheat well and are great for meal prep or parties.
