- 1.5 lbs baby potatoes, halved
- 2 tablespoons olive oil
- 1/4 cup brown sugar
- 2 tablespoons Dijon mustard
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Salt to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, whisk together brown sugar, Dijon mustard, soy sauce, apple cider vinegar, garlic powder, black pepper, and olive oil to make the glaze.
- Add the sliced sausage and halved potatoes to the bowl and toss well to coat.
- Spread the mixture evenly on a baking sheet lined with parchment paper or foil.
- Roast in the oven for 35–40 minutes, stirring halfway through, until the potatoes are tender and the glaze is caramelized.
- Remove from oven, garnish with fresh parsley if desired, and serve warm.
Notes
- You can use any variety of small potatoes—red, gold, or fingerling all work well.
- Add sliced onions or bell peppers for extra flavor and color.
- For a spicier version, add a pinch of red pepper flakes to the glaze.
