Ingredients

  • 2 medium sweet potatoes, peeled and shredded
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine shredded sweet potatoes, panko, Parmesan, garlic powder, onion powder, salt, and pepper.
  3. Drizzle in olive oil and mix well to combine.
  4. Form mixture into small tots using your hands or a scoop.
  5. Place tots evenly on the prepared baking sheet.
  6. Bake for 20–25 minutes, flipping halfway, until golden and crispy.
  7. Let cool slightly before serving with your favorite dipping sauce.
