- 1 pound ground chicken
- 1 cup grated sweet potato (about 1 medium sweet potato)
- 1 cup sharp cheddar cheese, sliced
- 1/3 cup barbecue sauce, divided
- 4 whole grain burger buns
- 4 lettuce leaves
- 1/2 medium red onion, sliced into rings
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- In a large bowl, combine ground chicken, grated sweet potato, egg, garlic powder, smoked paprika, salt, black pepper, and 2 tablespoons of the barbecue sauce. Mix gently until just combined.
- Form the mixture into 4 equal patties, about 1 inch thick.
- Heat olive oil in a large skillet over medium heat.
- Cook the patties for 5 to 6 minutes per side, or until fully cooked and the internal temperature reaches 165°F.
- During the last minute of cooking, place slices of sharp cheddar on each patty and cover the skillet briefly to allow the cheese to melt.
- Lightly toast the whole grain burger buns if desired.
- Assemble the burgers by placing each cheesy patty on the bottom bun, topping with remaining barbecue sauce, lettuce leaves, and red onion slices. Cover with the top bun and serve immediately.
Notes
- Grate the sweet potato finely so it blends evenly into the patties.
- Do not overmix the chicken mixture to keep the burgers tender.
- You can grill the patties instead of pan cooking over medium heat for about 5 minutes per side.
- Let the burgers rest for a few minutes before assembling to keep juices inside.
