- 2 lbs baby potatoes
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 2 cloves garlic, minced
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the baby potatoes in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes until the potatoes are tender.
- Drain the potatoes and allow them to cool slightly. Once cooled, gently smash each potato with a fork or potato masher until flattened but not falling apart.
- In a small bowl, mix olive oil, honey, red pepper flakes, paprika, salt, black pepper, and minced garlic to make the sauce.
- Place the smashed potatoes on the prepared baking sheet and drizzle with the honey-spice mixture. Toss the potatoes gently to coat them evenly.
- Bake the potatoes in the preheated oven for about 25-30 minutes or until they are golden and crispy on the edges, flipping them halfway through the cooking time.
- Remove from the oven and garnish with chopped fresh parsley before serving.
Notes
- Adjust the amount of red pepper flakes based on your heat preference.
- For an extra crispy texture, you can broil the potatoes for the last 2-3 minutes of baking.
- These potatoes can also be made with Yukon Gold or russet potatoes if you prefer a different variety.
