Description

  • 16 oz andouille sausage, sliced into half-coins
  • 2 tablespoons unsalted butter
  • 1 yellow onion, peeled and diced
  • 2 (27 oz) cans seasoned collard greens
  • 1 (15 oz) can corn kernels, drained
  • 1 (15 oz) can seasoned pinto beans, drained
  • 1 (15 oz) can hoppin’ john
  • 1 (15 oz) can diced tomatoes with green chiles
  • 1/2 tablespoon Cajun seasoning
  • 4 cups chicken broth


Instructions

  1. Place a large pot or Dutch oven over medium heat.
  2. Add butter and melt, then sauté diced onion for 3–4 minutes until soft and fragrant.
  3. Add sliced andouille sausage and sauté 4–5 minutes until browned.
  4. Add collard greens, corn, pinto beans, hoppin’ john, diced tomatoes with green chiles, and Cajun seasoning. Stir to combine.
  5. Pour in chicken broth, bring to a gentle boil, reduce heat, and simmer for 20–25 minutes, stirring occasionally.
  6. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve hot, optionally garnished with green onions, sour cream, or hot sauce.
