- 16 oz andouille sausage, sliced into half-coins
- 2 tablespoons unsalted butter
- 1 yellow onion, peeled and diced
- 2 (27 oz) cans seasoned collard greens
- 1 (15 oz) can corn kernels, drained
- 1 (15 oz) can seasoned pinto beans, drained
- 1 (15 oz) can hoppin’ john
- 1 (15 oz) can diced tomatoes with green chiles
- 1/2 tablespoon Cajun seasoning
- 4 cups chicken broth
Instructions
- Place a large pot or Dutch oven over medium heat.
- Add butter and melt, then sauté diced onion for 3–4 minutes until soft and fragrant.
- Add sliced andouille sausage and sauté 4–5 minutes until browned.
- Add collard greens, corn, pinto beans, hoppin’ john, diced tomatoes with green chiles, and Cajun seasoning. Stir to combine.
- Pour in chicken broth, bring to a gentle boil, reduce heat, and simmer for 20–25 minutes, stirring occasionally.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve hot, optionally garnished with green onions, sour cream, or hot sauce.
