Ingredients

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract
  • ½ cup powdered sugar (for rolling and dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar until fluffy. Beat in eggs, lemon juice, lemon zest, and vanilla.
  4. Gradually add dry ingredients to wet mixture, mixing until just combined. Chill dough for 15 minutes.
  5. Scoop tablespoon-sized portions, roll into balls, and coat in powdered sugar.
  6. Place on baking sheet 2 inches apart and bake 10–12 minutes until edges are set and tops are slightly crinkled.
  7. Cool on sheet for 2 minutes before transferring to a rack. Dust with extra powdered sugar if desired.
