- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 tablespoons fresh lemon juice

- 1 teaspoon vanilla extract
- ½ cup powdered sugar (for rolling and dusting)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and sugar until fluffy. Beat in eggs, lemon juice, lemon zest, and vanilla.
- Gradually add dry ingredients to wet mixture, mixing until just combined. Chill dough for 15 minutes.
- Scoop tablespoon-sized portions, roll into balls, and coat in powdered sugar.
- Place on baking sheet 2 inches apart and bake 10–12 minutes until edges are set and tops are slightly crinkled.
- Cool on sheet for 2 minutes before transferring to a rack. Dust with extra powdered sugar if desired.
- Serve warm or at room temperature.
