Description

Strawberry Crunch Cheesecake is an easy no bake dessert featuring creamy cheesecake layers, a buttery Golden Oreo crust, and a nostalgic strawberry shortcake crumble topping. Perfect for parties or family gatherings.

  • 24 Golden Oreo cookies
  • 4 tablespoons salted butter, melted
  • 24 ounces cream cheese (3 packages, room temperature)
  • 2 cups powdered sugar
  • 2 teaspoons lemon juice
  • 1 cup fresh strawberries, puréed
  • 2 teaspoons vanilla extract
  • 1½ cups heavy whipping cream
  • 1 batch strawberry shortcake crumble

Instructions

  1. Crush Golden Oreos in a food processor or in a Ziploc bag with a rolling pin until fine crumbs form.
  2. Add melted butter to the crumbs and mix until fully combined.
  3. Spray a 9-inch springform pan with cooking spray, then press the crust mixture evenly across the bottom and about one inch up the sides. Freeze while preparing the filling.
  4. In a large bowl, combine softened cream cheese, vanilla, lemon juice, and powdered sugar. Beat with an electric mixer until smooth and creamy.
  5. In a separate chilled bowl, whip heavy whipping cream with a hand mixer or stand mixer until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture to create a light and airy filling.
  7. Divide the filling in half. Set one half aside and fold puréed strawberries into the other half until fully incorporated.
  8. Pour the strawberry filling into the chilled crust and smooth the surface. Layer the plain filling on top and spread evenly.
  9. Cover the cheesecake with plastic wrap and freeze for at least 4-5 hours or overnight until firm.
  10. Remove the cheesecake from the freezer and carefully release it from the springform pan. Coat the top and sides with strawberry shortcake crumble.
  11. Return to freezer until ready to serve. Before slicing, allow to thaw for 10-15 minutes for easier cutting.
