Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup whole milk
  • 4 tablespoons unsalted butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 8 ounces cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 cup fresh strawberries, diced
  • 1 tablespoon lemon juice
  • Vegetable oil, for frying


Instructions

  1. Heat oil in a deep skillet or Dutch oven to 350°F (175°C). Line a tray with paper towels.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, whisk eggs, milk, melted butter, and vanilla extract. Combine with dry ingredients just until smooth.
  4. On a floured surface, roll dough to 1/2-inch thick and cut out donut shapes.
  5. Fry donuts 2–3 at a time until golden on both sides, about 2 minutes per side. Drain on paper towels and roll in sugar while warm.
  6. Beat cream cheese, powdered sugar, lemon juice, and vanilla until smooth. Thin with milk if needed for a glaze consistency.
  7. Drizzle or pipe glaze over cooled donuts. Top with fresh diced strawberries and let set.
  8. Serve immediately or store in the fridge for up to 3 days.
