Description

These Spinach and Feta Stuffed Sweet Potatoes are a healthy and flavorful dish combining creamy feta, tender spinach, and roasted sweet potatoes. Perfect as a vegetarian main or a hearty side dish.


Ingredients

  • 4 medium sweet potatoes, rinsed and scrubbed
  • 10 oz frozen chopped spinach, thawed
  • ¼ cup chopped cilantro
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 tsp minced garlic
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup crumbled feta cheese
  • ¼ cup chopped sun-dried tomatoes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Using a fork, pierce each sweet potato several times. Place them directly on the middle oven rack, with a foil-lined sheet pan below to catch drips.
  3. Bake for 45–60 minutes, or until tender when pierced with a fork.
  4. Remove sweet potatoes from oven and let cool slightly.
  5. Meanwhile, press as much liquid as possible from thawed spinach using paper towels.
  6. In a medium bowl, mix the drained spinach, cilantro, olive oil, lemon juice, garlic, oregano, salt, pepper, feta cheese, and sun-dried tomatoes until well combined.
  7. Once sweet potatoes are cool enough to handle, slice each lengthwise and scoop out most of the flesh, leaving skins intact.
  8. Add the scooped sweet potato flesh to the spinach mixture and stir until fully combined.
  9. Stuff each sweet potato skin generously with the mixture.
  10. Place stuffed sweet potatoes on a foil-lined baking sheet and bake for an additional 8–10 minutes until heated through.
  11. Serve hot.

  • For a vegan option, substitute feta with plant-based cheese.
  • Add a pinch of chili flakes for a spicy kick.
  • Pair with a fresh green salad for a complete meal.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven for best results.
