- 2 chicken breasts, boneless and skinless
- 8 oz pasta (penne, fusilli, or your choice)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup frozen spinach, thawed and squeezed dry
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1/2 cup cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to the package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook until browned and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside to rest, then slice into thin strips.
- In the same skillet, add the minced garlic and cook for 1 minute, until fragrant.
- Add the spinach, artichoke hearts, cream cheese, sour cream, and Parmesan cheese. Stir until the cream cheese has melted and the sauce is smooth. Season with red pepper flakes (if using), salt, and pepper to taste.
- Add the cooked pasta to the skillet, along with the reserved pasta water. Toss to combine, adding more water if necessary to achieve a creamy consistency.
- Fold in the sliced chicken and shredded mozzarella cheese, stirring until the cheese is melted and the chicken is well coated.
- Serve the pasta in bowls, garnished with chopped parsley and additional Parmesan cheese if desired.
Notes
- You can use rotisserie chicken for a quicker version of this dish.
- For a lighter version, you can substitute the cream cheese and sour cream with Greek yogurt or a lighter cream cheese alternative.
- This dish can be made ahead and stored in the fridge for up to 2 days. Reheat with a little extra pasta water to loosen the sauce.
