Description

A beautifully simple yet flavorful toast made with crisp sourdough, creamy whipped cottage cheese, and tangy raspberry chia jam, finished with lemon zest for a bright, satisfying bite.


Ingredients

  • 2 slices sourdough bread
  • ½ cup cottage cheese (full-fat)
  • 1 cup raspberries (fresh or frozen)
  • 1 tablespoon chia seeds
  • 1 tablespoon honey
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • Pinch of salt


Instructions

  1. Toast the sourdough slices until golden and crisp.
  2. In a saucepan, heat raspberries, honey, vanilla, and salt over medium heat for 5 minutes until berries break down.
  3. Stir in chia seeds, reduce heat, and cook for 2 more minutes. Remove from heat and let cool to thicken.
  4. Blend cottage cheese in a food processor or blender until smooth and whipped.
  5. Spread whipped cottage cheese over each slice of toast.
  6. Top with a generous spoonful of cooled raspberry chia jam.
  7. Sprinkle lemon zest on top and serve immediately.
