Description
Sour Cream Cucumbers Salad is a refreshing, creamy side dish made with crisp cucumbers, sweet onions, and a tangy sour cream dressing. Perfect for summer barbecues or as a light accompaniment to hearty meals.
Ingredients
Scale
- 1/2 cup sour cream
- 3 tablespoons white vinegar
- 1 tablespoon sugar
- Pepper to taste
- 4 medium cucumbers, peeled if desired, and thinly sliced
- 1 small sweet onion, thinly sliced and separated into rings
Instructions
- In a large bowl, whisk together sour cream, white vinegar, sugar, and pepper until well blended.
- Add sliced cucumbers and sweet onion rings to the bowl.
- Toss gently to coat the vegetables evenly with the creamy dressing.
- Cover the bowl and refrigerate for at least 4 hours to allow flavors to meld.
- Serve chilled using a slotted spoon to drain excess dressing.
Notes
- For a less watery salad, lightly salt the cucumber slices and let them drain for 10–15 minutes before mixing with the dressing.
- Substitute Greek yogurt for sour cream for a lighter version.
- Add fresh dill or parsley for extra flavor.
- Store leftovers in an airtight container in the fridge for up to 3 days.
