Description

A soft and fluffy tofu scramble made with golden seasoned tofu, sautéed bell peppers, onion, and garlic. This quick plant based breakfast is savory, satisfying, and ready in just 15 minutes.


Ingredients

  • 14 ounces (400 g) firm tofu
  • 1 tablespoon (15 ml) olive oil
  • 1/2 cup (75 g) red bell pepper, diced
  • 1/2 cup (75 g) green bell pepper, diced
  • 1/4 cup (40 g) onion, finely chopped
  • 2 garlic cloves (6 g), minced
  • 1/2 teaspoon (1 g) turmeric powder
  • 2 tablespoons (10 g) nutritional yeast
  • 1/2 teaspoon (3 g) salt
  • 1/4 teaspoon (0.5 g) black pepper
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Heat a nonstick skillet over medium low heat.
  2. Crumble the firm tofu gently into a mixing bowl.
  3. Add turmeric, nutritional yeast, salt, and black pepper to the tofu and toss lightly to coat.
  4. Add olive oil to the skillet. Sauté chopped onion and minced garlic for 2 to 3 minutes until fragrant and softened.
  5. Add diced red and green bell peppers. Cook for 3 minutes until slightly tender.
  6. Add the seasoned tofu to the skillet. Cook gently for 5 to 7 minutes, stirring occasionally.
  7. If the mixture begins to dry out, add a small splash of water to maintain moisture.
  8. Taste and adjust seasoning if needed.
  9. Remove from heat and sprinkle with fresh parsley.
  10. Serve warm and enjoy.

Notes

  • Cook over medium low heat to keep the texture soft and fluffy.
  • Do not overcook, as tofu can become dry.
  • Press tofu lightly before cooking to remove excess moisture if needed.
  • Leftovers can be reheated in a skillet with a splash of water.
