Description

Tender smoky spiced chicken cooked until juicy and lightly charred, wrapped in warm flatbread with crisp lettuce, fresh green bell pepper, and a cool creamy yogurt sauce. A bold and satisfying handheld meal packed with flavor and texture.


Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup plain yogurt
  • 4 large flatbreads
  • 2 cups fresh lettuce leaves
  • 1 medium green bell pepper, sliced


Instructions

  1. Heat a large skillet or grill pan over medium high heat.
  2. In a mixing bowl, combine chicken thighs, smoked paprika, ground cumin, minced garlic, olive oil, lemon juice, salt, and black pepper. Mix well and let marinate for at least 30 minutes.
  3. Lightly oil the hot skillet if needed.
  4. Place the marinated chicken in a single layer in the pan.
  5. Cook for 6 to 7 minutes per side until fully cooked and nicely browned.
  6. Remove from heat and let the chicken rest for 5 minutes before slicing into strips.
  7. Stir the plain yogurt until smooth to prepare the sauce.
  8. Warm the flatbreads slightly to make them flexible.
  9. Fill each flatbread with sliced chicken, lettuce leaves, sliced green bell pepper, and drizzle with yogurt sauce.
  10. Fold, wrap, and serve immediately while warm.

Notes

  • Marinating longer deepens the smoky flavor.
  • Do not overcrowd the pan to allow proper browning.
  • Let the chicken rest before slicing to keep it juicy.
  • Add minced garlic to the yogurt for extra flavor if desired.
