Description

Rich, gooey, and perfectly portioned, these small serve fudge brownies are ready in just 30 minutes. With a crackly top and a dense, fudgy center, they’re ideal for two or one serious chocolate lover.


Ingredients

  • 66 g dark chocolate
  • 40 g butter
  • 1 large egg
  • 60 g brown sugar
  • 30 g castor sugar
  • 20 g flour
  • 1 tsp corn flour
  • 10 g cocoa powder
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350°F (175°C). Line a small 5×5 or 6×6 inch baking pan with parchment paper.
  2. Melt the dark chocolate and butter together in a heatproof bowl over a double boiler or microwave until smooth.
  3. In a separate bowl, whisk the egg, brown sugar, and castor sugar for 1–2 minutes until light and frothy.
  4. Pour the melted chocolate mixture into the egg mixture and gently stir to combine.
  5. Sift in flour, corn flour, cocoa powder, and salt. Fold until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 16–20 minutes or until the center is just set but still soft.
  8. Cool slightly before slicing into squares. Serve warm or chilled.
