Description

A hearty slow cooker dish made with tender russet potatoes, smoky sausage, fresh green beans, and onions simmered together in a savory buttery broth for the ultimate comforting one pot meal.


Ingredients

  • 1.5 kilograms russet potatoes, peeled and cut into large chunks
  • 450 grams smoked sausage, sliced into rounds
  • 400 grams fresh green beans, trimmed
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 cup chicken broth, about 240 ml
  • 60 grams unsalted butter, sliced
  • 1 teaspoon paprika
  • 1 teaspoon salt, or to taste
  • 1 teaspoon freshly ground black pepper


Instructions

  1. Lightly grease the inside of a 6 quart slow cooker.
  2. Add the potato chunks, sliced smoked sausage, trimmed green beans, diced onion, and minced garlic into the slow cooker.
  3. Pour chicken broth evenly over the mixture.
  4. Sprinkle paprika, salt, and black pepper over the top, then distribute sliced butter evenly.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until potatoes are fork tender.
  6. Stir gently to combine and allow flavors to meld for about 5 minutes before serving.
  7. Serve warm directly from the slow cooker or transfer to a serving bowl.

  • Cut potatoes evenly to ensure consistent cooking.
  • Avoid over stirring to keep potatoes from breaking apart.
  • If the mixture seems dry during cooking, add a small splash of broth.
