Description

Slow Cooker Cheesy Potato & Broccoli Soup is a rich, creamy, and comforting dish loaded with fresh vegetables and melted cheddar cheese. Perfect for a cozy family meal or meal prep for the week.


Ingredients

  • 2 russet potatoes, diced
  • 4 cups fresh broccoli florets (approx. 1 head of broccoli)
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 carrot, chopped
  • 1 bay leaf
  • 4 cups vegetable broth or chicken broth
  • 1 tsp dried thyme
  • 8 oz full-fat cream cheese
  • Salt & pepper to taste
  • 2 cups shredded cheddar cheese

Instructions

  1. Add all ingredients except shredded cheddar cheese to a slow cooker.
  2. Cook on high for 4 hours or low for 6-8 hours until vegetables are tender.
  3. Remove the bay leaf and use an immersion blender to puree the soup to your desired consistency (leave some chunks if preferred).
  4. Stir in shredded cheddar cheese and cover. Let cook for an additional 15 minutes until cheese is fully melted.
  5. Serve hot and enjoy with crusty bread or a fresh side salad.
