- 2 russet potatoes, diced
- 4 cups fresh broccoli florets (approx. 1 head of broccoli)
- 1 yellow onion, diced
- 2 garlic cloves, minced
- 1 carrot, chopped
- 1 bay leaf
- 4 cups vegetable broth or chicken broth
- 1 tsp dried thyme
- 8 oz full-fat cream cheese
- Salt & pepper to taste
- 2 cups shredded cheddar cheese
Instructions
- Add all ingredients except shredded cheddar cheese to a slow cooker.
- Cook on high for 4 hours or low for 6-8 hours until vegetables are tender.
- Remove the bay leaf and use an immersion blender to puree the soup to your desired consistency (leave some chunks if preferred).
- Stir in shredded cheddar cheese and cover. Let cook for an additional 15 minutes until cheese is fully melted.
- Serve hot and enjoy with crusty bread or a fresh side salad.

- For a vegan version, substitute cream cheese and cheddar with dairy-free alternatives.
- Freshly shredded cheddar melts smoother than pre-shredded varieties.
