  • 1 lb beef chuck roast, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 1 cup green beans, trimmed
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Brown the beef cubes in batches, ensuring all sides are seared. Remove the beef and set aside.
  2. In the same skillet, sauté the onion and garlic for 2-3 minutes until softened.
  3. Transfer the beef, onion, and garlic to the slow cooker. Add the carrots, potatoes, green beans, beef broth, red wine (if using), Worcestershire sauce, thyme, rosemary, salt, and pepper.
  4. Stir everything to combine and cover with the slow cooker lid.
  5. Cook on low for 7-8 hours, or until the beef is tender and the vegetables are cooked through.
  6. Before serving, sprinkle with fresh parsley for a burst of color and flavor.

Notes

  • This dish pairs well with crusty bread or a side salad.
  • Feel free to swap the beef chuck roast for another cut of beef such as stew meat.
