- 1 lb beef chuck roast, cut into cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 carrots, peeled and sliced
- 2 medium potatoes, peeled and cubed
- 1 cup green beans, trimmed
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions
- In a large skillet, heat olive oil over medium-high heat. Brown the beef cubes in batches, ensuring all sides are seared. Remove the beef and set aside.
- In the same skillet, sauté the onion and garlic for 2-3 minutes until softened.
- Transfer the beef, onion, and garlic to the slow cooker. Add the carrots, potatoes, green beans, beef broth, red wine (if using), Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Stir everything to combine and cover with the slow cooker lid.
- Cook on low for 7-8 hours, or until the beef is tender and the vegetables are cooked through.
- Before serving, sprinkle with fresh parsley for a burst of color and flavor.

- This dish pairs well with crusty bread or a side salad.
- Feel free to swap the beef chuck roast for another cut of beef such as stew meat.
- If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, then stir it into the casserole during the last 30 minutes of cooking.
