Description

Sloppy Joe Biscuit Casserole is a comforting, easy-to-make casserole with a savory sloppy joe filling topped with flaky biscuit dough, baked to perfection for a family-friendly meal.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can sloppy joe sauce
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 can (8 oz) refrigerated biscuit dough
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or a little olive oil.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion, green bell pepper, and garlic, and sauté for 3-4 minutes until softened.
  3. Add the ground beef to the skillet and cook until browned, breaking it up into small pieces as it cooks.
  4. Stir in the sloppy joe sauce, ketchup, mustard, chili powder, salt, and pepper. Let the mixture simmer for 5-7 minutes until thickened.
  5. While the beef mixture simmers, open the can of biscuit dough and cut each biscuit into quarters.
  6. Spread the beef mixture evenly in the bottom of the prepared baking dish. Top with the quartered biscuits, arranging them evenly over the beef.
  7. Bake the casserole for 20-25 minutes, or until the biscuits are golden brown and the filling is bubbling.
  8. Sprinkle the shredded cheddar cheese on top of the biscuits and return the casserole to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving. Serve with a side salad or vegetables.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Feel free to add extra vegetables like mushrooms or carrots to the beef mixture for added flavor and nutrition.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
