- 1 pound ground beef
- 1/2 onion, chopped
- 1/2 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can sloppy joe sauce
- 1/4 cup ketchup
- 1 tablespoon mustard
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 can (8 oz) refrigerated biscuit dough
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or a little olive oil.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion, green bell pepper, and garlic, and sauté for 3-4 minutes until softened.
- Add the ground beef to the skillet and cook until browned, breaking it up into small pieces as it cooks.
- Stir in the sloppy joe sauce, ketchup, mustard, chili powder, salt, and pepper. Let the mixture simmer for 5-7 minutes until thickened.
- While the beef mixture simmers, open the can of biscuit dough and cut each biscuit into quarters.
- Spread the beef mixture evenly in the bottom of the prepared baking dish. Top with the quartered biscuits, arranging them evenly over the beef.
- Bake the casserole for 20-25 minutes, or until the biscuits are golden brown and the filling is bubbling.
- Sprinkle the shredded cheddar cheese on top of the biscuits and return the casserole to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving. Serve with a side salad or vegetables.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Feel free to add extra vegetables like mushrooms or carrots to the beef mixture for added flavor and nutrition.
