- 2 cups unsalted butter, at room temperature
- 3 cups granulated sugar
- 6 large eggs, at room temperature
- 3 cups all-purpose flour, sifted
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk, at room temperature
- 1 tablespoon vanilla extract
- 1 teaspoon almond extract (optional)
- For the Glaze (optional):
- 1 cup powdered sugar, sifted
- 2–3 tablespoons milk or heavy cream
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (163°C). Grease and flour a 10-inch Bundt or tube pan generously.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 5-7 minutes.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, sift together the flour, baking powder, and salt. Slowly add the flour mixture to the butter mixture in three parts, alternating with the milk. Start and end with the flour mixture, mixing until just combined.
- Add vanilla extract and almond extract (if using) and mix until just incorporated. Do not overmix.
- Pour the batter evenly into the prepared pan and smooth the top with a spatula.
- Bake for about 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. Start checking at 1 hour.
- Cool the cake in the pan for 10-15 minutes, then carefully turn it out onto a wire rack to cool completely.
- For the Glaze (Optional): In a small bowl, whisk together powdered sugar, milk or cream, and vanilla extract until smooth. Drizzle over the cooled pound cake.
