- 1.5 pounds chicken breast, cut into bite sized pieces
- 12 ounces kielbasa sausage, sliced into rounds
- 1 large red bell pepper, chopped into chunks
- 1 large yellow bell pepper, chopped into chunks
- 1 medium yellow onion, sliced
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
Instructions
- Heat a large skillet over medium heat.
- Season the chicken pieces with salt and black pepper.
- Add olive oil to the skillet and sear the chicken until lightly browned on all sides, about 5 to 7 minutes. Remove and set aside.
- In the same skillet, add sliced kielbasa and cook until lightly browned.
- Add sliced onion, red bell pepper, yellow bell pepper, and minced garlic. Cook until the vegetables begin to soften.
- Return the chicken to the skillet and pour in the chicken broth.
- Simmer for 10 to 15 minutes until the chicken is fully cooked and the sauce slightly thickens.
- Taste and adjust seasoning if needed, then serve warm.
