Description

Ingredients

  • 1.5 pounds chicken breast, cut into bite sized pieces
  • 12 ounces kielbasa sausage, sliced into rounds
  • 1 large red bell pepper, chopped into chunks
  • 1 large yellow bell pepper, chopped into chunks
  • 1 medium yellow onion, sliced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper


Instructions

  1. Heat a large skillet over medium heat.
  2. Season the chicken pieces with salt and black pepper.
  3. Add olive oil to the skillet and sear the chicken until lightly browned on all sides, about 5 to 7 minutes. Remove and set aside.
  4. In the same skillet, add sliced kielbasa and cook until lightly browned.
  5. Add sliced onion, red bell pepper, yellow bell pepper, and minced garlic. Cook until the vegetables begin to soften.
  6. Return the chicken to the skillet and pour in the chicken broth.
  7. Simmer for 10 to 15 minutes until the chicken is fully cooked and the sauce slightly thickens.
  8. Taste and adjust seasoning if needed, then serve warm.
