- 4 large egg yolks
- 1/2 cup fresh lemon juice (from about 2 lemons)

- 1/2 teaspoon vanilla extract
- 1 tablespoon unsalted butter (optional, for extra creaminess)
Instructions
- In a medium saucepan, combine the milk, sugar, cornstarch, and salt. Whisk together until smooth.
- Heat the mixture over medium heat, stirring constantly, until it begins to simmer and thicken (about 5-7 minutes).
- In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs.
- Slowly pour the tempered egg yolks back into the saucepan, whisking continuously.
- Continue to cook the mixture over medium heat, stirring constantly, until it thickens to a pudding-like consistency (about 2-3 minutes).
- Remove the saucepan from heat and stir in the fresh lemon juice, lemon zest, and vanilla extract. For extra creaminess, stir in the butter until fully melted.
- Transfer the pudding to individual serving dishes and let it cool to room temperature, then refrigerate for at least 2 hours to set.
- Serve chilled, optionally garnished with additional lemon zest or whipped cream.
Notes
- For a lighter version, you can substitute part of the whole milk with skim milk or almond milk.
- If you prefer a more intense lemon flavor, you can add more lemon zest or juice to taste.
- This pudding can be made ahead of time and stored in the refrigerator for up to 3 days.
