Description

Sicilian lemon pudding is a creamy, tangy dessert that captures the fresh and vibrant flavors of Sicilian lemons. This smooth and velvety pudding is perfect for a light yet indulgent treat.


Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 1/2 cup fresh lemon juice (from about 2 lemons)
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon unsalted butter (optional, for extra creaminess)

Instructions

  1. In a medium saucepan, combine the milk, sugar, cornstarch, and salt. Whisk together until smooth.
  2. Heat the mixture over medium heat, stirring constantly, until it begins to simmer and thicken (about 5-7 minutes).
  3. In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs.
  4. Slowly pour the tempered egg yolks back into the saucepan, whisking continuously.
  5. Continue to cook the mixture over medium heat, stirring constantly, until it thickens to a pudding-like consistency (about 2-3 minutes).
  6. Remove the saucepan from heat and stir in the fresh lemon juice, lemon zest, and vanilla extract. For extra creaminess, stir in the butter until fully melted.
  7. Transfer the pudding to individual serving dishes and let it cool to room temperature, then refrigerate for at least 2 hours to set.
  8. Serve chilled, optionally garnished with additional lemon zest or whipped cream.

Notes

  • For a lighter version, you can substitute part of the whole milk with skim milk or almond milk.
  • If you prefer a more intense lemon flavor, you can add more lemon zest or juice to taste.
  • This pudding can be made ahead of time and stored in the refrigerator for up to 3 days.
