Description

Shrimp Tortellini with Garlic Sauce is a creamy pasta dish featuring tender shrimp and cheese-filled tortellini tossed in a rich garlic cream sauce with fresh spinach and Parmesan. Perfect for weeknight dinners or special occasions.

  • 2 lbs large shrimp, peeled, deveined, tail-off
  • 20 oz refrigerated three cheese tortellini
  • 1 tbsp olive or grapeseed oil
  • 1/3 cup dry white wine
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 1 tbsp all-purpose flour
  • 6 oz seafood or chicken stock
  • 4 oz cream cheese, softened
  • 2 cups heavy cream
  • 1 tsp dried basil
  • 5 oz fresh baby spinach
  • 1/4 tsp crushed red pepper
  • 1/2 cup freshly grated Parmesan
  • All-purpose seasoning for shrimp (Lawry’s seasoning salt and Mrs. Dash garlic & herb)

Instructions

  1. Season shrimp with all-purpose seasoning.
  2. Heat 1 tbsp olive or grapeseed oil in a large 12-inch skillet over medium-high heat. Sear shrimp in two batches for 1–2 minutes per side. Remove and set aside, adding more oil and butter between batches if needed.
  3. Reduce heat to medium-low. Deglaze skillet with dry white wine. Add 6 tbsp butter and minced garlic. Cook and stir for 3 minutes until fragrant. Stir in flour until fully dissolved.
  4. Whisk in seafood or chicken stock. Add softened cream cheese and stir until smooth. Add heavy cream and dried basil. Simmer uncovered on low heat for 5–7 minutes, stirring frequently.
  5. Cook tortellini according to package instructions. Drain and set aside.
  6. Add fresh spinach to the sauce and stir until wilted. Stir in crushed red pepper and Parmesan until melted. Taste and adjust seasoning if needed.
  7. Add cooked tortellini and shrimp to the sauce. Stir gently to combine and serve warm.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Use gluten-free tortellini for a gluten-free option.
  • Add mushrooms or sun-dried tomatoes for extra flavor.
  • Store leftovers in an airtight container for up to 3 days and reheat gently on the stovetop.
