Ingredients
Scale
- 2 lbs large shrimp, peeled, deveined, tail-off
- 20 oz refrigerated three cheese tortellini
- 1 tbsp olive or grapeseed oil
- 1/3 cup dry white wine
- 8 tbsp unsalted butter
- 2 tbsp minced garlic
- 1 tbsp all-purpose flour
- 6 oz seafood or chicken stock
- 4 oz cream cheese, softened
- 2 cups heavy cream
- 1 tsp dried basil
- 5 oz fresh baby spinach
- 1/4 tsp crushed red pepper
- 1/2 cup freshly grated Parmesan
- All-purpose seasoning for shrimp (Lawry’s seasoning salt and Mrs. Dash garlic & herb)
Instructions
- Season shrimp with all-purpose seasoning.
- Heat 1 tbsp olive or grapeseed oil in a large 12-inch skillet over medium-high heat. Sear shrimp in two batches for 1–2 minutes per side. Remove and set aside, adding more oil and butter between batches if needed.
- Reduce heat to medium-low. Deglaze skillet with dry white wine. Add 6 tbsp butter and minced garlic. Cook and stir for 3 minutes until fragrant. Stir in flour until fully dissolved.
- Whisk in seafood or chicken stock. Add softened cream cheese and stir until smooth. Add heavy cream and dried basil. Simmer uncovered on low heat for 5–7 minutes, stirring frequently.
- Cook tortellini according to package instructions. Drain and set aside.
- Add fresh spinach to the sauce and stir until wilted. Stir in crushed red pepper and Parmesan until melted. Taste and adjust seasoning if needed.
- Add cooked tortellini and shrimp to the sauce. Stir gently to combine and serve warm.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Use gluten-free tortellini for a gluten-free option.
- Add mushrooms or sun-dried tomatoes for extra flavor.
- Store leftovers in an airtight container for up to 3 days and reheat gently on the stovetop.
