  • 1 lb cheese tortellini
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot of boiling salted water, cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt, pepper, onion powder, and garlic powder. Cook for about 3 minutes on each side until the shrimp are pink. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in heavy cream and chicken broth, stirring to fully combine. Bring to a simmer on low heat.
  4. Add Parmesan cheese, lemon zest, lemon juice, dried basil, and dried thyme. Stir until the sauce is smooth and creamy. If the sauce is too thick, add a little more chicken broth to reach desired consistency.
  5. Add cooked tortellini and shrimp back into the skillet, tossing gently to coat in the creamy sauce.
  6. Cook for an additional 2–3 minutes until everything is heated through.
  7. Garnish with fresh chopped parsley before serving.

Notes

  • Do not overcook the shrimp to keep them tender.
  • Reserve a little pasta water to adjust sauce consistency if needed.
  • Use freshly grated Parmesan for the best flavor and texture.
  • For a lighter version, swap heavy cream with half-and-half.
