- 2 pounds chicken thighs
- 3 medium bell peppers, sliced
- 1 large onion, sliced
- 3 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 200°C.
- Toss chicken with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Spread peppers and onions on a sheet pan.
- Place chicken on top of vegetables.
- Roast for 35 minutes until cooked through.
- Sprinkle with fresh parsley.
- Serve hot.
