This dish combines savory sausage with the sweetness of peppers and rich cheese for a comforting dinner.
Ingredients
Scale
- 12 lasagna noodles
- 1 lb Italian sausage (mild or spicy, based on preference)
- 1 onion, chopped
- 2 bell peppers, chopped (red and yellow recommended)
- 2 cloves garlic, minced
- 1 can (14.5 oz) crushed tomatoes
- 1 can (6 oz) tomato paste
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes (optional, for heat)
- 1 1/2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions, drain, and set aside.
- In a large oven-safe skillet, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it apart as it cooks. Remove any excess fat.
- Add the chopped onion and bell peppers to the skillet with the sausage. Cook for 5-7 minutes, until the vegetables are softened.
- Stir in the minced garlic and cook for 1 minute. Add the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes (if using), salt, and pepper. Simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and the flavors meld together.
- In a separate bowl, mix together the ricotta cheese, 1 cup of mozzarella cheese, and Parmesan cheese.
- Layer the lasagna: Spread a thin layer of the sausage mixture at the bottom of the skillet. Place a layer of lasagna noodles over the sauce, followed by a layer of the cheese mixture. Repeat this layering process until all the ingredients are used, finishing with a layer of the sausage sauce on top.
- Top the lasagna with the remaining mozzarella cheese and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it rest for 5 minutes before serving.
Notes
- For a spicier version, use hot Italian sausage or add extra red pepper flakes.
- You can also add spinach or zucchini for extra vegetables.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or microwave.
