This dish combines savory sausage with the sweetness of peppers and rich cheese for a comforting dinner.


Ingredients

  • 12 lasagna noodles
  • 1 lb Italian sausage (mild or spicy, based on preference)
  • 1 onion, chopped
  • 2 bell peppers, chopped (red and yellow recommended)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes (optional, for heat)
  • 1 1/2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions, drain, and set aside.
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it apart as it cooks. Remove any excess fat.
  3. Add the chopped onion and bell peppers to the skillet with the sausage. Cook for 5-7 minutes, until the vegetables are softened.
  4. Stir in the minced garlic and cook for 1 minute. Add the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes (if using), salt, and pepper. Simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and the flavors meld together.
  5. In a separate bowl, mix together the ricotta cheese, 1 cup of mozzarella cheese, and Parmesan cheese.
  6. Layer the lasagna: Spread a thin layer of the sausage mixture at the bottom of the skillet. Place a layer of lasagna noodles over the sauce, followed by a layer of the cheese mixture. Repeat this layering process until all the ingredients are used, finishing with a layer of the sausage sauce on top.
  7. Top the lasagna with the remaining mozzarella cheese and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it rest for 5 minutes before serving.

Notes

  • For a spicier version, use hot Italian sausage or add extra red pepper flakes.
  • You can also add spinach or zucchini for extra vegetables.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or microwave.
