Description

Salmon-Stuffed Avocados are a healthy and flavorful dish featuring creamy avocado halves filled with a mixture of flaked salmon, Greek yogurt, and fresh herbs, perfect as a light lunch or appetizer.


Ingredients

  • 2 ripe avocados, halved and pitted
  • 1 can (6 oz) wild-caught salmon, drained and flaked
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon capers, chopped (optional)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (optional, for drizzling)

Instructions

  1. Slice the avocados in half and remove the pits. Use a spoon to slightly scoop out some of the flesh to make space for the salmon filling.
  2. In a small bowl, combine the flaked salmon, Greek yogurt, lemon juice, red onion, dill, capers (if using), salt, and pepper. Mix until well combined.
  3. Stuff each avocado half with the salmon mixture, pressing gently to fit it in.
  4. Optionally, drizzle the stuffed avocados with olive oil for extra flavor and richness.
  5. Serve immediately as an appetizer or light main course, garnished with extra dill or a squeeze of lemon juice if desired.

Notes

  • Feel free to swap the salmon for tuna or crab meat for a different flavor.
  • If you prefer a dairy-free option, replace Greek yogurt with avocado or a dairy-free yogurt alternative.
