- 2 ripe avocados, halved and pitted
- 1 can (6 oz) wild-caught salmon, drained and flaked
- 1/4 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 2 tablespoons red onion, finely chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon capers, chopped (optional)
- Salt and pepper, to taste
- 1 tablespoon olive oil (optional, for drizzling)
Instructions
- Slice the avocados in half and remove the pits. Use a spoon to slightly scoop out some of the flesh to make space for the salmon filling.
- In a small bowl, combine the flaked salmon, Greek yogurt, lemon juice, red onion, dill, capers (if using), salt, and pepper. Mix until well combined.
- Stuff each avocado half with the salmon mixture, pressing gently to fit it in.
- Optionally, drizzle the stuffed avocados with olive oil for extra flavor and richness.
- Serve immediately as an appetizer or light main course, garnished with extra dill or a squeeze of lemon juice if desired.
Notes
- Feel free to swap the salmon for tuna or crab meat for a different flavor.
- If you prefer a dairy-free option, replace Greek yogurt with avocado or a dairy-free yogurt alternative.
