Ingredients

  • 6 large red bell peppers
  • 2 tablespoons olive oil
  • ½ teaspoon salt


Instructions

  1. Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Place whole red peppers on the sheet and drizzle lightly with olive oil. Roll to coat evenly.
  3. Roast for 25–30 minutes, turning halfway through, until skins are blistered and charred.
  4. Transfer peppers to a bowl and cover tightly with foil or plastic wrap. Let steam for 10 minutes.
  5. Peel off skins, remove stems and seeds, then slice or leave whole.
  6. Sprinkle with salt and a drizzle of olive oil before serving or storing.
