- 2 medium artichokes
- 1/4 cup olive oil
- 3 tablespoons butter, melted
- 4 garlic cloves, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the artichokes by cutting off the top third of each artichoke, trimming the stems, and removing the tough outer leaves. Use kitchen scissors to trim the sharp tips of the remaining leaves.
- Cut the artichokes in half lengthwise and remove the fuzzy choke in the center using a spoon.
- Place the artichokes in a large bowl of water with lemon juice to prevent browning.
- In a small bowl, mix together olive oil, melted butter, minced garlic, salt, and pepper.
- Place the artichoke halves on a baking sheet, cut side up. Brush them generously with the garlic butter mixture, making sure to coat the leaves and hearts.
- Cover the artichokes with aluminum foil and roast in the oven for 35-40 minutes, or until the leaves are tender and can be easily pulled away from the artichoke.
- Remove the foil and roast for an additional 10 minutes to allow the tops to crisp up.
- Garnish with fresh parsley and serve hot with extra garlic butter for dipping.
Notes
- Serve with a squeeze of lemon juice on top for extra flavor.
- If you prefer, you can also add Parmesan cheese on top before the final roasting for a cheesy twist.
- For a different flavor, try adding herbs like thyme or rosemary to the garlic butter mixture.
