Description

A bold and hearty one-skillet meal, Redneck Rice is packed with smoked sausage, ground beef, rice, gooey cheddar cheese, and a drizzle of tangy barbecue sauce. Perfect for easy dinners, game days, and feeding hungry crowds.


Ingredients

  • 3 cups cooked rice (preferably day-old)
  • 12 ounces smoked sausage, sliced
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • ¼ cup green onions, sliced
  • ½ cup barbecue sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). If using an oven-safe skillet, make sure it’s ready.
  2. In a large skillet, heat olive oil over medium. Sauté onions and bell pepper until softened, about 5 minutes. Add garlic and cook 1 minute more.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in sliced sausage and cook 3–4 minutes. Add cooked rice, Cajun seasoning, salt, and pepper. Mix in half of the shredded cheese.
  5. Spread mixture evenly and top with remaining cheese. Cover with foil.
  6. Bake for 15 minutes covered, then uncover and bake an additional 10 minutes until cheese is melted and bubbly.
  7. Drizzle barbecue sauce on top and sprinkle with green onions before serving.

Notes

  • Use cold, day-old rice for best texture.
  • Customize with your favorite cheese or protein.
  • Reheat in oven or microwave. Tastes even better the next day!
