A bold and hearty one-skillet meal, Redneck Rice is packed with smoked sausage, ground beef, rice, gooey cheddar cheese, and a drizzle of tangy barbecue sauce. Perfect for easy dinners, game days, and feeding hungry crowds.

- 3 cups cooked rice (preferably day-old)
- 12 ounces smoked sausage, sliced
- 1 pound ground beef
- 1 small onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 cups shredded cheddar cheese
- ¼ cup green onions, sliced
- ½ cup barbecue sauce
- 1 tablespoon olive oil
- 1 teaspoon Cajun seasoning
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). If using an oven-safe skillet, make sure it’s ready.
- In a large skillet, heat olive oil over medium. Sauté onions and bell pepper until softened, about 5 minutes. Add garlic and cook 1 minute more.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in sliced sausage and cook 3–4 minutes. Add cooked rice, Cajun seasoning, salt, and pepper. Mix in half of the shredded cheese.
- Spread mixture evenly and top with remaining cheese. Cover with foil.
- Bake for 15 minutes covered, then uncover and bake an additional 10 minutes until cheese is melted and bubbly.
- Drizzle barbecue sauce on top and sprinkle with green onions before serving.
Notes
- Use cold, day-old rice for best texture.
- Customize with your favorite cheese or protein.
- Reheat in oven or microwave. Tastes even better the next day!
