Description
Raspberry Cheesecake Stuffed Donuts are soft, pillowy donuts filled with a creamy cheesecake mixture and tangy raspberry jam, dusted with powdered sugar for a decadent bakery-style treat.

- 2 1/4 teaspoons active dry yeast
- 3/4 cup warm milk (110°F/43°C)
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- Vegetable oil, for frying
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar (plus more for dusting)
- 1/2 teaspoon vanilla extract (for filling)
- 1/2 cup raspberry jam
Instructions
- In a large bowl, dissolve yeast in warm milk with 1 tablespoon of sugar. Let sit for 5–10 minutes until foamy.
- Whisk in remaining sugar, melted butter, eggs, and vanilla extract.
- Gradually mix in flour and salt until a soft dough forms. Knead for 5–7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise for 1–1.5 hours, or until doubled in size.
- Punch down dough and roll out to 1/2-inch thickness. Cut into circles using a 3-inch cutter.
- Place cut donuts on a baking sheet, cover, and let rise for another 30 minutes.
- Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry donuts in batches for 1–2 minutes per side until golden brown. Drain on paper towels.
- In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Transfer cheesecake filling to a piping bag fitted with a round tip. Fill another piping bag with raspberry jam.
- Using a skewer, make a small hole in the side of each donut. Pipe in some cheesecake filling, followed by raspberry jam.
- Dust donuts generously with powdered sugar before serving.
Notes
- For extra flavor, mix a little lemon zest into the cheesecake filling.
- Donuts are best enjoyed the same day they’re made.
- You can use store-bought brioche donuts to save time and just add the fillings.
- Chill the cheesecake filling for 20 minutes before piping for easier handling.
