Description
A light, bubbly Raspberry Bellini made with fresh raspberry puree, a touch of lemon, simple syrup, and chilled sparkling wine. This elegant cocktail is fruity, refreshing, and perfect for brunches, celebrations, and special gatherings.

- 1 cup fresh raspberries
- 1 teaspoon fresh lemon juice
- 1 to 2 teaspoons simple syrup, adjusted to taste
- 1 bottle (750 ml) sparkling wine, well chilled
Instructions
- Blend the fresh raspberries in a blender until completely smooth.
- Stir in the fresh lemon juice and 1 teaspoon simple syrup. Taste and adjust sweetness with additional syrup if needed.
- If desired, strain the puree through a fine mesh strainer to remove seeds for a smoother texture.
- Spoon 1 to 2 tablespoons of raspberry puree into each champagne flute.
- Slowly pour the chilled sparkling wine into each glass, filling about three quarters full.
- Gently stir once to combine without reducing the bubbles.
- Serve immediately while chilled and sparkling.
Notes
- Use very cold sparkling wine to preserve carbonation.
- Adjust sweetness depending on the ripeness of the raspberries.
- For a non alcoholic version, substitute sparkling wine with sparkling grape juice.
- Prepare the raspberry puree up to 2 days in advance and refrigerate in an airtight container.
