This Quick & Easy Artichoke Sandwich is creamy, cheesy, and full of bright Mediterranean-inspired flavor, featuring grilled artichoke hearts, melted provolone, tangy Peppadew peppers, and mayo on toasted Tuscan garlic rolls.

- 2 Tuscan garlic rolls, halved lengthwise
- 2 tablespoons mayonnaise
- 1 (14.5-ounce) jar grilled artichoke hearts, drained
- 2 slices deli provolone cheese
- ½ cup Peppadew peppers, finely chopped
Instructions
- Preheat a skillet or sandwich press over medium heat.
- Spread mayonnaise evenly on the cut sides of the Tuscan rolls.
- Lightly toast the rolls, cut-side down, in the skillet until golden.
- Layer artichoke hearts on the bottom half of each roll, then top with chopped Peppadews and provolone cheese.
- Place the sandwich halves together and toast in the skillet until the cheese melts and the bread is crisp.
- Slice in half and serve warm.
Notes
- Drain artichokes well to prevent sogginess.
- Use ciabatta or French rolls if Tuscan garlic rolls aren’t available.
