Description
This queso fundido is hot, bubbly, and irresistibly cheesy. Made with just two main ingredients — melty cheese and spiced chorizo — it’s the perfect quick appetizer for any gathering.

- 1 ½ cups shredded mozzarella cheese
- 1 ½ cups shredded Monterey Jack cheese
- ½ pound ground chorizo sausage
- ½ cup cherry tomatoes, halved
- 2 tablespoons fresh cilantro, chopped
Instructions
- Preheat oven to 400°F (or set broiler to high).
- In a cast iron skillet over medium heat, cook chorizo until browned and crispy. Remove from heat.
- Mix shredded cheeses in a bowl. Spread over the chorizo in the skillet.
- Bake for 8–10 minutes or broil for 2–4 minutes until cheese is melted and bubbly.
- Top with cherry tomatoes and chopped cilantro.
- Serve hot with tortilla chips or warm tortillas.
Notes
- Use freshly shredded cheese for better melting.
- Top right before serving to keep herbs and tomatoes fresh.
- For extra spice, use pepper jack or add jalapeño slices.
