Description

This queso fundido is hot, bubbly, and irresistibly cheesy. Made with just two main ingredients — melty cheese and spiced chorizo — it’s the perfect quick appetizer for any gathering.


Ingredients

  • 1 ½ cups shredded mozzarella cheese
  • 1 ½ cups shredded Monterey Jack cheese
  • ½ pound ground chorizo sausage
  • ½ cup cherry tomatoes, halved
  • 2 tablespoons fresh cilantro, chopped


Instructions

  1. Preheat oven to 400°F (or set broiler to high).
  2. In a cast iron skillet over medium heat, cook chorizo until browned and crispy. Remove from heat.
  3. Mix shredded cheeses in a bowl. Spread over the chorizo in the skillet.
  4. Bake for 8–10 minutes or broil for 2–4 minutes until cheese is melted and bubbly.
  5. Top with cherry tomatoes and chopped cilantro.
  6. Serve hot with tortilla chips or warm tortillas.

Notes

  • Use freshly shredded cheese for better melting.
  • Top right before serving to keep herbs and tomatoes fresh.
  • For extra spice, use pepper jack or add jalapeño slices.
