- 2 cups caramelized onions
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 1 cup roasted red peppers, sliced
- 3 garlic cloves, minced
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 2 tablespoons olive oil
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 egg, beaten
Instructions
- Preheat oven to 400°F (200°C). Grease or line a 9×13 inch baking dish with parchment paper.
- Heat olive oil in a skillet. Add sliced onions and cook over medium-low heat, stirring often, until golden and caramelized (about 20–25 minutes). Add garlic, thyme, salt, and pepper.
- Roll out one sheet of puff pastry and fit it into the baking dish, pressing into corners and up the sides.
- Layer caramelized onions, roasted peppers, and shredded cheese over the pastry base.
- Top with the second sheet of puff pastry, pressing edges to seal. Poke a few holes with a fork.
- Brush top with beaten egg for a golden finish.
- Bake for 25–30 minutes or until the pastry is puffed and golden.
- Let cool for 5–10 minutes before slicing and serving.
