Description

This Puff Pastry Casserole is warm, cheesy, and packed with flavor. Layers of caramelized onions, roasted red peppers, and gooey cheese are tucked inside a golden, flaky puff pastry crust. Perfect for cozy dinners or impressive gatherings.


Ingredients

  • 2 puff pastry sheets, thawed
  • 2 cups caramelized onions
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup roasted red peppers, sliced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 2 tablespoons olive oil
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 egg, beaten


Instructions

  1. Preheat oven to 400°F (200°C). Grease or line a 9×13 inch baking dish with parchment paper.
  2. Heat olive oil in a skillet. Add sliced onions and cook over medium-low heat, stirring often, until golden and caramelized (about 20–25 minutes). Add garlic, thyme, salt, and pepper.
  3. Roll out one sheet of puff pastry and fit it into the baking dish, pressing into corners and up the sides.
  4. Layer caramelized onions, roasted peppers, and shredded cheese over the pastry base.
  5. Top with the second sheet of puff pastry, pressing edges to seal. Poke a few holes with a fork.
  6. Brush top with beaten egg for a golden finish.
  7. Bake for 25–30 minutes or until the pastry is puffed and golden.
  8. Let cool for 5–10 minutes before slicing and serving.

  • Thaw puff pastry in the fridge overnight for best handling.
  • Letting the casserole rest before slicing helps it hold together.
  • Sprinkle parmesan or herbs on top before baking for extra flavor.
  • Reheat leftovers in the oven to maintain crispiness.
