These Pressure Cooker Italian Beef Sandwiches are juicy, tender, and packed with bold Italian flavors, making them a perfect choice for a hearty lunch or dinner.

- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 packet Italian dressing mix (about 1 oz)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 cup beef broth
- 1/2 cup pepperoncini peppers with juice
- 1/2 cup sliced bell peppers (optional)
- 1 small onion, sliced
- 6 hoagie rolls or sandwich buns
- 6 slices provolone cheese
Instructions
- Cut the beef into large chunks and season with salt and pepper.
- Turn the pressure cooker to sauté mode and heat olive oil. Brown the beef on all sides, then remove and set aside.
- Add sliced onions to the pot and sauté for 2–3 minutes.
- Return beef to the pot and add beef broth, Italian dressing mix, garlic powder, onion powder, crushed red pepper flakes, pepperoncini peppers with juice, and bell peppers if using.
- Lock the lid, set to high pressure, and cook for 60 minutes. Allow pressure to release naturally for 15 minutes, then quick release any remaining pressure.
- Shred the beef using two forks and mix it with the juices in the pot.
- Toast hoagie rolls, add shredded beef, top with provolone cheese, and broil for 1–2 minutes until melted.
Notes
- For a spicier sandwich, add extra pepperoncini or crushed red pepper.
- You can make this a day ahead; the flavor improves overnight.
- Serve with au jus for dipping if desired.
