- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons poppy seeds
- 1 cup crushed buttery crackers (such as Ritz)
- 1/4 cup melted butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Season the chicken breasts with salt and pepper and place them in the prepared baking dish.
- In a bowl, mix together the cream of chicken soup, sour cream, mayonnaise, Dijon mustard, and poppy seeds until smooth. Pour this mixture over the chicken breasts, spreading it evenly.
- In a separate bowl, combine the crushed crackers with melted butter. Sprinkle the cracker mixture evenly over the top of the casserole.
- Bake for 30-35 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the topping is golden brown and crispy.
- Serve hot and enjoy!
Notes
- You can use a rotisserie chicken to save time and make this recipe even easier.
- For a lighter version, you can substitute the sour cream and mayonnaise with Greek yogurt or a lighter dressing.
- If you prefer more crunch, add extra crushed crackers or even some grated cheese to the topping.
