Description

Poppy Seed Chicken is a creamy and flavorful casserole dish made with tender chicken, a creamy sauce, and a crunchy poppy seed topping, perfect for a comforting dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons poppy seeds
  • 1 cup crushed buttery crackers (such as Ritz)
  • 1/4 cup melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Season the chicken breasts with salt and pepper and place them in the prepared baking dish.
  3. In a bowl, mix together the cream of chicken soup, sour cream, mayonnaise, Dijon mustard, and poppy seeds until smooth. Pour this mixture over the chicken breasts, spreading it evenly.
  4. In a separate bowl, combine the crushed crackers with melted butter. Sprinkle the cracker mixture evenly over the top of the casserole.
  5. Bake for 30-35 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the topping is golden brown and crispy.
  6. Serve hot and enjoy!

Notes

  • You can use a rotisserie chicken to save time and make this recipe even easier.
  • For a lighter version, you can substitute the sour cream and mayonnaise with Greek yogurt or a lighter dressing.
