Description

Poor Man’s Husband Casserole is a hearty, budget-friendly dish made with ground beef, potatoes, and vegetables, all baked together in a savory sauce. It’s simple, satisfying, and perfect for a family meal.


Ingredients

  • 1 lb ground beef
  • 4 large potatoes, peeled and sliced
  • 1 onion, chopped
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the ground beef and onion, cooking until the beef is browned and the onion is soft. Drain excess fat if necessary.
  2. In a separate bowl, mix the cream of mushroom soup and milk until smooth.
  3. In a greased 9×13-inch baking dish, layer the sliced potatoes, followed by the cooked ground beef mixture, frozen vegetables, and soup mixture. Season with salt and pepper.
  4. Cover the dish with aluminum foil and bake for 45 minutes, or until the potatoes are tender.
  5. Remove the foil, sprinkle shredded cheddar cheese over the top, and return the casserole to the oven. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Let cool slightly before serving.

  • This casserole can be made ahead of time and refrigerated for up to 2 days before baking.
