Description

Poor Man’s Casserole is a hearty, budget-friendly dish made with layers of creamy noodles, seasoned ground beef, and rich tomato sauce, topped with melted Colby Jack and cheddar cheese. Perfect for family dinners or meal prep.

  • 1 tbsp olive oil
  • 1.5 lbs ground beef
  • ½ tbsp garlic powder
  • ½ tbsp onion powder
  • ½ tbsp Italian seasoning
  • ½ tbsp + 1 tsp Tony’s Creole seasoning divided
  • 1 onion chopped
  • 6 garlic cloves chopped
  • Salt and cracked black pepper to taste
  • 12 oz wide egg noodles
  • 28 oz can tomato sauce
  • ¾ cup water
  • Pinch of sugar
  • 8 oz cream cheese softened
  • 8 oz sour cream
  • 8 oz freshly shredded Colby Jack divided
  • 5 oz freshly shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick spray.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon.
  3. Season the beef with garlic powder, onion powder, Italian seasoning, and ½ tbsp Tony’s Creole seasoning. Cook until nearly browned.
  4. Add chopped onions, garlic, salt, and cracked black pepper. Sauté until the beef is fully browned. Drain excess grease if needed.
  5. Pour in the tomato sauce. Fill the empty can with ¾ cup water, swish to get the remaining sauce, and add it to the pan. Stir in a pinch of sugar. Bring to a boil, then reduce to simmer for 10–15 minutes.
  6. While the sauce simmers, cook egg noodles in salted water until al dente. Drain and set aside.
  7. In a mixing bowl, combine softened cream cheese, sour cream, and 1 tsp Tony’s Creole seasoning. Stir until smooth. Mix in the cooked noodles until fully coated.
  8. Layer the casserole: spread a ladle of meat sauce in the baking dish, add half the creamy noodles, sprinkle 4 oz Colby Jack cheese, add more meat sauce, remaining noodles, another 4 oz Colby Jack, and finish with remaining meat sauce. Top with shredded cheddar cheese.
  9. Bake uncovered for 25–30 minutes until cheese is melted and bubbly.
  10. Let the casserole rest for 20–25 minutes before serving for cleaner slices.
