Description

Plantain Cheesy Bread is a tropical-inspired, golden bread filled with gooey mozzarella and a touch of natural sweetness from ripe plantains. Soft, fluffy, and rich, it’s perfect for breakfast, snacks, or anytime comfort food cravings.


Ingredients

  • 410g ripe plantain (peeled and mashed)
  • 70g butter (softened)
  • 11g yeast
  • 1 tsp salt
  • 45g caster sugar
  • 90g lukewarm milk
  • 415g plain flour
  • Mozzarella cheese (for filling)
  • 1 beaten egg (for egg wash)


Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, mash the ripe plantains until smooth. Mix in butter, sugar, salt, milk, and yeast.
  3. Gradually add flour while mixing until a soft dough forms. Knead until smooth and elastic.
  4. Divide dough into portions. Flatten each one, add mozzarella in the center, and seal to enclose the cheese.
  5. Place the filled dough pieces on the baking tray. Brush each with beaten egg for a glossy finish.
  6. Let rest for 10 minutes, then bake for 20–25 minutes or until golden brown.
  7. Serve warm to enjoy the gooey, cheesy center.

  • Use very ripe plantains for the best sweetness and texture.
  • Seal edges well to prevent cheese from leaking during baking.
  • Brush with egg wash evenly for a shiny crust.
