- 410g ripe plantain (peeled and mashed)
- 70g butter (softened)
- 11g yeast
- 1 tsp salt
- 45g caster sugar
- 90g lukewarm milk
- 415g plain flour
- Mozzarella cheese (for filling)
- 1 beaten egg (for egg wash)
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large bowl, mash the ripe plantains until smooth. Mix in butter, sugar, salt, milk, and yeast.
- Gradually add flour while mixing until a soft dough forms. Knead until smooth and elastic.
- Divide dough into portions. Flatten each one, add mozzarella in the center, and seal to enclose the cheese.
- Place the filled dough pieces on the baking tray. Brush each with beaten egg for a glossy finish.
- Let rest for 10 minutes, then bake for 20–25 minutes or until golden brown.
- Serve warm to enjoy the gooey, cheesy center.
