Description

Pizza Fiesta is a vibrant, flavor-packed homemade pizza loaded with colorful veggies, gooey cheese, and zesty toppings—perfect for a festive family dinner or weekend treat.

Ingredients

  • Pizza Dough: 1 pound, store-bought or homemade
  • Olive Oil: 2 tablespoons
  • Tomato Sauce: 3/4 cup
  • Mozzarella Cheese: 1 1/2 cups shredded
  • Cheddar Cheese: 1/2 cup shredded
  • Bell Peppers: 1/2 cup sliced (red and yellow)
  • Red Onion: 1/4 cup thinly sliced
  • Sweet Corn: 1/4 cup
  • Jalapeños: 2 tablespoons sliced
  • Black Olives: 1/4 cup sliced
  • Garlic Powder: 1/2 teaspoon
  • Chili Flakes: 1/4 teaspoon
  • Fresh Cilantro: A small handful chopped

Instructions

  1. Preheat Your Equipment: Place a pizza stone or baking sheet in the oven and preheat to 475°F (245°C) for 30 minutes.
  2. Combine Ingredients: Toss sliced peppers, onions, corn, and jalapeños in a bowl with 1 tablespoon olive oil and a pinch of salt.
  3. Prepare Your Cooking Vessel: Roll or stretch the dough into a 12-inch circle on a floured surface. Transfer to parchment paper.
  4. Assemble the Dish: Spread tomato sauce evenly over the dough, sprinkle with garlic powder. Add mozzarella and cheddar, followed by the sautéed veggies, olives, and chili flakes.
  5. Cook to Perfection: Slide the pizza (with parchment) onto the hot stone or baking sheet. Bake for 12–15 minutes, until crust is golden and cheese bubbly.
  6. Finishing Touches: Drizzle remaining olive oil around the crust. Sprinkle chopped cilantro on top.
  7. Serve and Enjoy: Slice it hot and share the joy—every bite is a celebration.

Notes

  • Pre-cook watery veggies like mushrooms to avoid soggy crust.
  • Use parchment paper to make transferring the pizza easy and mess-free.
  • Let the pizza rest for 2 minutes before slicing to allow the cheese to set.
