Description

A bright, herb-packed Middle Eastern salad made with fresh parsley, juicy tomato, crisp red onion, and a tangy lemon-sumac-olive oil dressing. Simple, zesty, and perfect as a side or light starter.


Ingredients

  • 1 medium red onion, thinly sliced
  • 1 large tomato, diced
  • 1 lemon, juiced
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons sumac
  • 2 tablespoons extra virgin olive oil


Instructions

  1. Chop parsley finely, slice red onion thinly, and dice the tomato.
  2. In a mixing bowl, combine parsley, onion, and tomato.
  3. Squeeze the lemon juice over the mixture.
  4. Add salt, black pepper, and sumac. Toss well to coat evenly.
  5. Drizzle with extra virgin olive oil and gently mix again.
  6. Let sit for 5–10 minutes before serving to allow flavors to meld.
