- 1 medium red onion, thinly sliced
- 1 large tomato, diced
- 1 lemon, juiced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 teaspoons sumac
- 2 tablespoons extra virgin olive oil
Instructions
- Chop parsley finely, slice red onion thinly, and dice the tomato.
- In a mixing bowl, combine parsley, onion, and tomato.
- Squeeze the lemon juice over the mixture.
- Add salt, black pepper, and sumac. Toss well to coat evenly.
- Drizzle with extra virgin olive oil and gently mix again.
- Let sit for 5–10 minutes before serving to allow flavors to meld.
