Description

A bright and creamy Pineapple and Coconut Carrot Salad made with freshly grated carrots, juicy pineapple, sweet raisins, and soft shredded coconut folded into a light tangy dressing. Refreshing, slightly sweet, and perfect for gatherings or make ahead meals.


Ingredients

  • 1 1/2 cups pineapple chunks, well drained
  • 1/2 cup golden raisins
  • 1 cup unsweetened shredded coconut
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt


Instructions

  2. Place the finely grated carrots in a large mixing bowl.
  3. Add the well drained pineapple chunks, golden raisins, and shredded coconut to the carrots.
  4. Pour the prepared dressing over the mixture.
