Ingredients

  • 6 ounces Renard’s Mozzarella cheese, shredded (1 1/2 cups)
  • 1 cup diced pepperoni
  • 3/4 cup pizza sauce, divided
  • 1 tablespoon dried oregano
  • 2 pounds ground beef (80% lean)
  • Salt and pepper, to taste
  • 6 ounces Renard’s Mozzarella cheese, cut into six slices (1 ounce each)
  • 6 hamburger buns, split
  • Optional Toppings: extra pepperoni, pickled peppers, bell peppers, red onion, ripe olives

Instructions

  1. Preheat and grease the grill grate. Heat grill to medium.
  2. In a large bowl, combine shredded mozzarella, diced pepperoni, 1/2 cup pizza sauce, and dried oregano.
  3. Crumble ground beef over the mixture and mix just until combined.
  4. Form the mixture into six 1/3-pound patties. Season each with salt and pepper.
  5. Grill patties, covered, over medium heat for 5–8 minutes per side, or until internal temperature reaches 160°F.
  6. Top each patty with a mozzarella slice. Cover and cook for an additional 1–3 minutes until cheese is melted.
  7. Spread remaining 1/4 cup of pizza sauce on the bottom buns.
  8. Place patties on buns, add desired toppings, and close with top buns. Serve hot.

Notes

  • Do not overmix the meat to keep the burgers tender.
  • Use low-moisture mozzarella to avoid soggy patties.
  • Burgers can be grilled or cooked in a cast iron skillet indoors.
  • Store leftovers in an airtight container for up to 3 days.
  • Raw patties can be frozen for up to 3 months.
